Green Apple and Carrot Salad with Japanese Mayo & Wasabi Dressing

This salad is healthy, totally raw and refreshing, which makes it an excellent source of fiber.  It has a Japanese twist because of the Japanese mayonnaise, nori (seaweed) and wasabi.


GREEN APPLE & CARROT SALAD WITH JAPANESE MAYO & WASABI DRESSING
Serves 4

2 carrots, peeled and cut into thin strips (like matchsticks)
3 Granny Smith apples, cut into thin strips (like matchsticks)
Juice and zest of 1/2 lemon
3/4 cup Japanese mayonnaise
1 teaspoon wasabi
1 tablespoon honey
Splash of olive oil
Pepper to taste
Sprinkle of finely sliced nori

Procedure:

1. Peel the carrots. Cut them into thin, matchstick-like strips. To make this task easy, I used a special peeler with teeth. Set aside in your salad bowl.


Those teeth are sharp and cut the vegetables into very thin strips.
2.  Cut the green apples into matchsticks and mix it well with the lemon juice and rind.


3.  Combine the apples and carrots in one bowl. Throughly mix.


4. Assemble the dressing. I used Japanese mayo, wasabi, pepper, honey, pepper and a splash of olive oil.



Mix thoroughly with a wire whisk.


5.  Add the dressing to the carrots and apples.


6. Mix well to ensure all the apples and carrots are coated with the dressing.


7. Sprinkle the salad with the cut nori. Refrigerate an hour before serving. Enjoy!
