Spaghetti with Shrimp & Roe

This is one of my favourite "go to" recipes when I want to make a quick seafood pasta. It's easy to make, flavourful and lemony. It uses two types of roe and some nori (seaweed).





SPAGHETTI WITH SHRIMP & ROE

Ingredients:
500 grams spaghetti noodles
2 cups prawns, deveined and shelled
1 onion, chopped into squares
1 head of garlic, sliced
3 tablespoons olive oil
3 tablespoons smelt roe (these are the small, orange ones)
2 tablespoons salmon roe (these are the bigger, orange ones that pop in your mouth)
1 teaspoon chili flakes (adjust according to taste)
Zest and juice of one lemon
1 1/2 chicken cube
1/2 cup white wine
Sprinkling of nori

Procedure:

1.  Heat the oil and panfry the garlic and onion till the garlic is light brown and the onions are translucent.


2.  Add the prawns, chicken cube and and pan fry till they are pink. Add the chili flakes. Turn off the stove.


3.  In another pot, cook the pasta in very hot water with salt. Add only when it's a rolling boil.  Once the pasta is almost cooked, go back to the other pan with the shrimp, garlic and onion and turn on the fire. Once it is hot again, add the white wine and mix.

Once the noodles are al dente, add them to the shrimp mixture. Then add the smelt roe.


4.  Mix well, and add the lemon juice.


5.  Transfer the pasta into a serving dish and top with the salmon roe, lemon zest and nori. Serve warm. Bon appetite!
