Easy Puff Pastry Fruit Tart


My Pear & Strawberry Tart, served with a Berry Ice Cream.

This is a quick dessert. It's beautiful, delicious and healthy, and takes no more than 30 minutes to prepare.




EASY PUFF PASTRY FRUIT TART
Serves 8

2 pears, sliced thinly
4 big strawberries, sliced thinly
1 lemon; grate the rind and set aside; set aside the juice
1/8 teaspoon chili flakes
pinch of salt
4 tablespoons brown sugar
Fresh mint leaves, cut into strips; reserve some for topping
1 sheet puff pastry, cut lengthwise into two pieces
1 teaspoon demerara sugar, for topping

Procedure:

1.  Preheat oven to 440F.  Put the sliced pear into a bowl. Add the lemon juice, sugar, 3/4 of the mint leaves, chili flakes and salt. Mix thoroughly.




2.  Cut the puff pastry lengthwise and put it on a baking sheet lined with baking paper.  Put the pear slices, making sure to overlap the next slice with the previous one. On hindsight, I think I could have made the slices even closer, to put more pear into every pastry sheet...

3.  Top with sliced strawberries.



4.  Put it into the preheated oven for 20 minutes. At the 10 minute mark, turn the pan.  Take it out of the oven once you see that it's golden brown. Sprinkle the lemon rind, the fresh mint that you set aside, and some demerara sugar.


5.  Serve with ice cream on the side. I selected a berry flavoured ice cream to complement the strawberries.
