Carrot & Cucumber Sesame Salad

This is a cold, raw salad of carrot and cucumber, sprinkled with toasted sesame seeds, in a dressing of lemon, honey and sesame oil. Simple to do, very refreshing and perfect with dry, grilled or fried food. It's very healthy too, because it's completely raw and fresh!



CARROT & CUCUMBER SESAME SALAD

2 cucumbers, cut into thin strips
2 carrots, cut into thin strips
3 tablespoons sesame seeds, toasted (with dry pan, no oil, until brown)
Zest of one lemon

Sesame Lemon Dressing:

Juice of one lemon (same one!)
1 tablespoon honey
1 tablespoon sesame oil
Mix together with a wire whisk until integrated well.

Procedure:

1.  Cut the carrots and cucumbers into thin, short strips. (I used this special Zyliss peeler with teeth. It's an amazing tool that cuts vegetables into very thin strips.) Put into your salad bowl.

2. Sprinkle with the toasted sesame seeds and the lemon zest. Add the dressing and mix the salad well. Chill before serving.
