Green Tea and Chocolate Waffles

This is my "go to" recipe for Belgian waffles. It's very easy to make and if you make the batter the night before (leave it in the ref, covered) and cook it the next morning, the waffle becomes fluffier, as the yeast has had time to grow.

You can make it plain too (and omit the green tea and chocolate).

I sprinkled the waffles with confectioner's sugar and served them with blackberries and raspberries.

GREEN TEA AND CHOCOLATE WAFFLES
Makes 8 small waffles (3"x3" each)

Ingredients:
3/4 teaspoon dry yeast
1/2 cup warm water
1.5 cups all purpose flour
1/4 teaspoon salt
1/2 cup milk
1/4 stick unsalted butter, melted
1 large egg
1/2 teaspoon vanilla extract
1/4 cup dark chocolate bits
1 teaspoon green tea powder

This is the Green Tea powder brand that I used.

Procedure:
1.  Dissolve the yeast in warm water and set it aside. In a large bowl, mix the flour with salt. Add the yeast mixture, milk, butter, egg and vanilla until well integrated.



2. Add the chocolate bits and fold until the batter is well blended. If you have the time, make the batter the night before. Cover this mix with plastic wrap and leave overnight in the ref If not, just use it right away.


3. Preheat your waffle machine or waffle skillet and grease it with oil. Use a ladle to dispense the batter onto the waffle machine/skillet. Turn it over to cook the other side. I usually turn it over one more time to cook the first side to ensure the waffle's edges are crispy.


4. Assemble the waffle on a plate. Dust with confectioner's sugar. Top with berries. For this one, I used blackberries and raspberries.
